Dee earned her Bachelor of Science degree in Environmental Chemistry from San Jose State University.  During her 19-year career as an organic analytical chemist, she moved up the industry ladder from bench chemist to laboratory supervisor to ultimately managing the entire quality assurance program for one of the nation’s leading environmental testing laboratories.

During the years in which she practiced chemistry, Dee became intimately familiar with the chemical names and toxic properties of the majority of common environmental pollutants, particularly those used in and on America’s food supply.  She made the connection that pesticides, preservatives, flavorings, colorings, and refined carbohydrates affect body chemistry in such a way that balanced health is difficult to sustain.  It was this understanding that led to a dramatic transformation in her life—she overcame a decades long battle with obesity by eliminating processed foods from her diet.

In 2000, she returned to the classroom to become formally trained as a diet counselor and nutrition educator at Bauman College.  The curriculum she studied focused on nutritional therapies for achieving optimal health, and on health-supportive cooking, which is based on preparing balanced meals using high-quality ingredients that are whole, natural (as opposed to man-made), unprocessed or minimally processed, fresh, in-season, and organic whenever possible.

Since earning her certification in nutrition and diet counseling, Dee has become a trailblazer, coining the term “processed-free” to describe her nutrition philosophy of moving away from processed foods to eating foods in their closest-to-natural form.

Dr. NaRisa Waldo, PhD, MSN, RN and CEO of The Waldo Way, LLC was born, raised and resides in East Texas.

NaRisa holds a Master’s of Nursing, PhD in Psychology and is a Healing Touch Spiritual Ministries Practitioner. From 2005 until 2013 she was honored to work with nursing students as a professor in the college of nursing at The University of Texas at Tyler. As a strength based holistic educator she was culturally aware, an effective lecturer, creative, and enjoyed a respectful rapport with students and peers. She is an accomplished writer and speaker who has published and presented her research nationwide.

In 2012 she began her journey of owning and operating an Agritourism business, which is located just outside of Mineola Texas. The Waldo Way is a 75-acre farm, which boasts of being the only Grade A Raw Milk Dairy Farm featuring Guernsey cows in the state of Texas. These cows were specifically chosen for their genetic makeup, docile disposition, A-2 protein, golden beta-carotene rich milk, protein to fat ratio and the just plain, natural, wonderful tasting milk. These magnificent cows are partners in her boutique dairy farm adventure.

She is passionate about educating others on the lost arts of home economics and living a holistic lifestyle. The Waldo Way follows organic farming principles and processed-free lifestyle. Her dairy farm boasts of creamy yogurt, butter, effervescent Kefir, and of course, the golden milk.

Her business plan was to feature other local farms and become a “central market” for Wood County. A place where customers could come and purchase a wide variety of fresh processed free products from local sustainable farms. The Waldo Way currently hosts six other farms in the store and is a seasonal farmer’s market.  To date, the farm is a destination site with many coming from surrounding cities, other states, and other countries. The Waldo Way Dairy farm has a charming Gatehouse Inn for guests and is a venue for monthly events such as cooking classes, elegant five course dinners, Sunday brunches, and ladies spa day.

Her heart is blessed each morning, as cars line-up at the gate waiting to purchase quality foods and experience a touch of nostalgia. Please Facebook: The Waldo Way Dairy Farm.
